Phytotherapy and Acupuncture Specialist Dr. Instructor Member Serhat Koran made important statements about the blue egg, which is claimed to be ‘the egg with the highest nutritional value in the world’. Dr. Koran stated that the egg, which is a complete protein source in terms of nutrition, supports physical and mental development especially in children and said, “Blue eggs, which are obtained from Ameraucana and Araucanas breeds of chickens raised in the USA region, have started to be produced in our country in recent years. The main reason for the emergence of blue colored eggs from such chickens is the biliveredin pigment they contain in their structure.


Noting that the nutritional value of blue eggs is quite high, Dr. Koran said, “Chicken eggs are rich in protein, vitamins such as A, E, K, D, B2, B6, B12, and minerals such as calcium, iron, phosphorus, iodine, fluorine, sodium, potassium, chlorine, sulfur, zinc, magnesium.

It is a food that has great benefits in processes such as strengthening the immune system, Alzheimer’s, bone health, and intelligence development in children.

However, the strength of the nutritional value of the egg is more related to the nutritional quality of the chicken than the color of the egg. There are studies showing that the amount of many proteins and vitamins, especially Omega 3, is higher in the eggs of chickens fed in the natural environment.

Ameraucana and Araucanas breed chickens can produce enough biliveredin pigment by feeding organically in their natural habitats, and it is known that they can produce blue eggs only under these conditions. In this sense, the blue egg can be a harbinger of a naturally healthy-fed chicken.”
